Directions
Preparing the Stuffing (भरावन तैयार करें):
Grate the radish and sprinkle a little salt over it. Let it rest for 15 minutes to release water.
- Squeeze the grated radish to remove excess water. Keep the radish aside, and reserve the water for kneading the dough.
- Heat oil in a pan, add cumin seeds and mustard seeds. Let them splutter.
- Add grated ginger and green chili. Sauté for 1-2 minutes.
- Add the squeezed radish, carom seeds, and coriander powder. Cook until the mixture is dry and fragrant.
- Once the stuffing cools down, set it aside.
Preparing the Dough (आटा तैयार करें):
In a mixing bowl, combine whole wheat flour, carom seeds, and salt.
- Gradually add water (use the reserved radish water for extra flavor) and knead into a smooth, soft dough.

Assembling the Parathas (पराठा तैयार करें):
Divide the dough into equal-sized balls and flatten them slightly.
- Place a spoonful of the radish stuffing in the center of the disc.
- Gather the edges of the disc and seal the stuffing inside. Flatten the stuffed dough gently.
- Roll it out again into a paratha, ensuring the stuffing doesn’t spill out.
Cooking the Parathas (पराठा पकाएं):
Heat a tawa or griddle over medium flame.
- Place the rolled-out paratha on the hot tawa and cook for 1-2 minutes until light brown spots appear.
- Flip the paratha and apply oil or ghee. Cook until golden and crispy on both sides.
Serving (परोसें):
Serve the hot Mooli Paratha with a dollop of butter, pickle, or yogurt for a complete meal.
