- Prepare mustard Base
Preparing the Mustard Curry Base (सरसों का बेस तैयार करें):
Heat oil in another pan and add cumin seeds. Let them splutter.
- Stir in the yellow mustard paste and 2 tablespoons of water. Cook for 2-3 minutes.
- Add turmeric powder, red chili powder, garam masala powder, and salt. Mix well.
- Cook the mixture on medium heat, stirring continuously, until the mustard paste turns darker and the spices are well blended.
Combining the Arbi and Curry (अरबी और करी मिलाएं):
Add the fried arbi pieces to the prepared mustard curry base.
- Stir well to coat the arbi evenly with the mustard masala.
- Add a little water (as required) to adjust the consistency of the curry.
- Cover and simmer for 5-10 minutes, allowing the flavors to meld together.
Garnishing and Serving (गार्निश और परोसें):
Garnish the Arbi Sabzi with freshly chopped coriander leaves.
- Serve hot with steamed rice, jeera rice, or roti for a complete and satisfying meal.
