Wash the moong dal and rice thoroughly and soak them separately for 20 minutes. Drain and set aside.
- Chop the vegetables (carrots, peas, bell peppers, potatoes, and cauliflower) into bite-sized pieces.
Cooking the Vegetables (सब्जियां पकाएं):
Heat ghee or oil in a deep pan or pressure cooker over medium heat.
- Add the chopped mixed vegetables and spices.
- Stir well and sauté for 3-4 minutes until the vegetables are slightly tender and coated with the spices.
- Set it aside.
Adding Rice and Dal (चावल और दाल डालें):
In a pressure cooker add the soaked moong dal and rice and spices.
- Pour in 4 cups of water and add salt to taste. Stir well to combine.
- Mix thoroughly with the vegetables
Cooking the Khichdi (खिचड़ी पकाएं):
Cover the pan or pressure cooker with a lid. If using a pressure cooker, cook on medium heat for 2-3 whistles.
Garnishing and Tempering (गार्निश और तड़का):
Heat ghee, then add cumin seeds and red chili for tempering.
- Garnish the hot Veg Khichdi with freshly chopped coriander leaves.
- Serve immediately with a dollop of ghee, papad, pickle, or plain yogurt for a complete and comforting meal.
