Directions
Preparing the Malpua Batter (बैटर तैयार करें):
In a large mixing bowl, combine all-purpose flour, semolina, sugar, grated coconut, crushed fennel seeds, and a pinch of salt.
- Gradually add milk while whisking to form a smooth, lump-free batter. The consistency should be slightly thick yet pourable.
- Add cardamom powder, Kesar and other dry fruits
- Whisk everything together
Preparing the Sugar Syrup (चाशनी तैयार करें):
In a pan, combine powdered sugar, 1 cup water, cardamom pods, and saffron strands.
- Heat the mixture and stir until the sugar dissolves completely.
Frying the Malpua (मालपुआ तलें):
Heat oil in a deep frying pan over medium flame.
- Once the oil is hot, reduce the flame to low-medium. Pour a ladleful of batter into the oil, forming a small pancake.
- Fry until golden brown and crisp on both sides.
Soaking in Syrup (चाशनी में डुबोएं):
Dip the hot Malpua in the warm sugar syrup for 1-2 minutes. Ensure both sides are well coated.
- Remove and place on a serving plate.
Garnishing and Serving (सजावट और परोसें):
Garnish the Malpua with crushed pistachios or grated coconut for an extra layer of flavor.
- Serve warm with a drizzle of syrup or alongside rabri (sweetened condensed milk) for a decadent treat.
