Directions
Preparing the Vegetables (सब्जियों की तैयारी करें):
Cut and wash the cauliflower and potatoes thoroughly.
- Chop tomatoes, green chilies, ginger, and fresh coriander leaves for garnishing.
Tempering the Spices (मसाले का तड़का लगाएं):
Heat mustard oil in a deep pan or kadhai until it reaches its smoking point. Lower the heat.
- Add bay leaf, cumin seeds, asafoetida, cloves, black peppercorns, and whole red chilies. Sauté until aromatic.
Cooking the Vegetables (सब्जियां पकाएं):
Fry cauliflower and put it aside
- Now add the potatoes, chopped tomatoes , green chilies and the spices. Cook for 2-3 minutes until the tomatoes soften.
- Add the fried cauliflower and mix well
Simmering and Adding Final Touches (अंतिम स्पर्श):
If required add a splash of water to deglaze the pan and cover with a lid. Let the vegetables simmer on low heat until tender (approximately 10 minutes).
Garnishing and Serving (सजावट और परोसें):
Garnish with freshly chopped coriander leaves.
- Serve hot with roti, paratha, or steamed rice. Pair it with pickles or raita for a wholesome meal.
