Tips from Kalpana’s Kitchen to make sure your kheer is a delightful experience every time:
1. Keep stirring the pot while the kheer is being cooked!
2. You may adjust the amount of milk to make the kheer more runny or thicker. We recommend 400 ml of cow milk to begin with.
3. Cooking for more than a few boils will thicken the kheer’s texture, and make it creamier. However, you don’t want to burn away all the milk, it’ll make Kheer lumpy!
4. Save the garnish for last, when you are about to serve the kheer in bowls.
I prefer adding the sweetener, sugar, or jaggery, after 3-5 mins of the kheer mix simmering in the milk.
5. Don’t forget to experiment with kheer pairings. Try bananas, anaar (pomegranate), strawberries, kalakand, kala-jamun!
