Soaking the Chana (चने भिगोना):
Wash the black chickpeas thoroughly and soak them in 3 cups of water overnight or for at least 8 hours.

Heat 1-2 tablespoons of oil in a deep pan or pressure cooker add cumin seeds and let them splutter.
- Add the chopped onions and sauté until golden brown.
- Add ginger-garlic paste and cook for 1-2 minutes until the raw aroma disappears.
- Stir in the chopped tomatoes and green chilies. Cook until the tomatoes soften and blend with the onions.
Adding Spices (मसाले डालें):
Add turmeric powder, red chili powder, and coriander powder and other spices to the curry base.
Cooking the Chana (चना पकाएं):
Add the soaked black chickpeas to the pan. Stir well to coat the chickpeas with the masala.

- Cover and pressure cook for 3-4 whistles or until the chickpeas are tender. If using a pan, simmer until the chickpeas are fully cooked
Final Touch (अंतिम मसाले डालें):
Simmer the curry for another 5-7 minutes to allow the flavors to meld.
Garnishing and Serving (गार्निश और परोसें):
Garnish the Chana Ghughni with freshly chopped coriander leaves.
- Serve hot with roti, paratha, steamed rice, or chura for a hearty and satisfying meal.
