Directions
Preparing the Arbi and Makhana (अरबी और मखाना तैयार करें):
Peel and cut the arbi into uniform slices.
- Wash it nicely
- Heat oil in a pan and deep-fry the arbi pieces until light golden brown. Remove and set aside.
- Fry the makhana until crisp and set aside.
Preparing the Masala (मसाला तैयार करें):
In a mixer, grind tomatoes, ginger, and green chili into a smooth puree. Transfer to a bowl.
- Heat ghee in a pan over medium heat.
- Once hot, add carom seeds and let them sizzle.
- Add asafoetida, turmeric powder, coriander powder, red chili powder, and kasuri methi. Mix well.
- Pour in the tomato puree, stir, and cook until the oil separates from the masala.
Cooking the Arbi Makhana (अरबी मखाना पकाएं):
Add the fried arbi and makhana to the masala. Mix well to coat them in the spices.
- Add water as needed to adjust the consistency of the curry.
- Turn off the heat and garnish with freshly chopped coriander leaves.
